Easy Baked Chicken with Veggie Wrap in 30 minutes!
The Story
Lately, I’ve been craving for a good baked chicken meals like my mum use to make for me when I was younger but work has been taxing and we can’t really go out to eat a full meal during our lunch break. Being the over-thinker that I am, I must get my reports, training, and presentation just right before I present them, so I usually use my break time to rehearse and eat at the same time. That being the case, I normally go for those fast food items like bread or instant noodle cups as lunch. I know, I know – not healthy Nadia, but they were fast and filling.
People often tell me that if I plan earlier, I can just order foodpanda or grabfood and then I will get a nice balance hot meal. But ordering from these platforms is much more expensive and I’m trying to save for my trip back to Maldives at the end of this year, so cheaper meals would be convenience store meals!
It was with a great blessing to all of us who were in the same boat as me when the convenience store next door (MyNews) started to sell these fresh ready-to-eat meals. One of my favorites to buy is these Baked Chicken with Veggie Wrap and they give you a side of ranch to dip it with. But it was still too expensive for my taste!
At RM8.20 per wrap, I can get a heartier meal of Egg Fried Rice for RM1 cheaper at the restaurant up ahead. So, with the mission to still commit to my goal of eating more healthier and more veggies this year, I’ve decided to make my own healthy baked chicken with a veggie wrap for lunch this week and see how much I can save up and how fast I can make it!
Easy Baked Chicken with Veggie Wrap Recipe
Baked Chicken Marinate Ingredients
- 200g of Chicken Breast
- 1 tablespoon of turmeric powder
- 1 inch of ginger
- 1 clove of garlic
- 1 stick of lemon grass
- 1 cup of roughly diced red onions
- 1/2 teaspoon of salt
- 1/2 teaspoon of olive oil (or any vegetable oil)
- 1 spoon of coconut milk (optional)
Instructions
- Cut the chicken breast into thin strips (roughly would fit your wrap)
- Blend all the ingredients to marinate the chicken until it turns into a fine paste.
- Put all the ingredients into a container and marinate the chicken for 15-20 minutes.
- Once it is close to being done, preheat the oven to 220 Celsius for 10 minutes.
- After the chicken is marinated, line it in a baking tray and baked it for about 20 minutes at 220 Celsius Oven
- Once it is done, leave it to cool before putting it on your wrap.
The Assembly
Veggie Wrap Ingredients
- Ready-made tortilla wraps
- 1/2 cup of thinly sliced red onions
- 1/2 cup of sliced red cabbage
- 1/2 cup of julienne carrots
- 1 cup of lettuce (of your choice – I went with butterhead)
- Ready-made ranch dressing
Instructions
- Neatly put everything on your choice of tortilla wrap. I started mine with lettuce, cabbage, carrots, onions, and lastly, my delicious baked chicken.
2. Roll your yummy goodness tightly into a fine wrap. Mark and cut into three portions.
3. Plate it and enjoy!
Conclusion
Overall, the cooking time for me was quick for a baked chicken recipe. I spent 35 minutes in total from start to finish plating my food. I was able to make 5 wraps in total! Why five? Well, the bag of wraps only has five. I had some extra chicken, veggie, and ranch leftover still!
So, how much was each wrap cost me to make?
Overall, I spent RM36.50 for groceries to buy all the ingredients. I was able to make 5 wraps and that means each wrap would be RM7.30! Was it worth it? Of course! Cooking your own meals has always been cheaper and better. And I have leftover ingredients still. All I need to do is get more wraps for the week and enjoy my yummy baked chicken with veggie wrap.

In homemade, you can customize it to your taste. Iceberg lettuce? No thanks! Give me butterhead any day! A tiny portion of red cabbage. let’s fix that when you make your own! More chicken? Yes, please! And, if you look closer, the iceberg lettuce on MyNews one has started to brown a bit indicating it has been a while since it was first made. If you make it yourself? You can ensure the freshness of the veggies!
It is apparently super hard to find a ready-made ranch here in Malaysia! Mihu and I were so surprised. We had to travel to Jaya Grocer (a market that sells more international goods) to finally find some ranch. I should have made some on my own, but when I saw the recipe – that really takes a big commitment. So pass on that.
Tip? We bought the Kraft Classic Ranch Lite Dressing – it has good reviews from all over but, it’s not for me! I was eyeing a different brand which was Hidden Valley Ranch but it cost slightly more and my mind was telling me, Krafts should be the king of condiments, theirs should be better, right? It was a bit runny for my taste. I had to add some good old kewpie mayo into the mix and then it was fantastic. Kewpie Mayo always saves the day!
